DREAMY DRAGON SMOOTHIE
Elsa’s Wholesome Life by Ellie Bullen (Pan Macmillan)
2 peeled frozen bananas
1 frozen dragon fruit
2 handfuls of ice cubes
1 cup baby spinach leaves
½ teaspoon spirulina powder
1 tablespoon cashews or almonds
pre-soaked
1 tablespoon natural peanut butter
1 tablespoon cacao powder
½ cup soy or almond milk
3 tablespoons shredded coconut
1 tablespoon cacao nibs
Place the bananas, dragon fruit, ice cubes, spinach,
spirulina, nuts, peanut butter, cacao powder, coconut
water, soy or almond milk, and 2 tablespoons of
the shredded coconut in a blender and blitz on high
until smooth and creamy. Pour into two or three jars
or tumblers and top each with the cacao nibs and
remaining coconut.
