RASPBERRY CHAMPAGNE COCKTAIL • ¼ cup fresh or frozen raspberries • 2 tablespoons lime juice • 2 tablespoons caster sugar • Champagne • Raspberry liqueur • Fresh raspberries to garnish 1. Puree the raspberries, lime juice and caster sugar in a blender until smooth. 2. In a champagne glass add one tablespoon of the raspberry puree and one teaspoon of raspberry liqeuer. 3. Top with champagne and garnish with a fresh raspberry. Cocktail CRANBERRY MARTINI • ¼ cup gin • ¼ cup cranberry juice • 2 tablespoons vermouth • 3 ice cubes • Frozen or dried cranberries to garnish • Sprig of mint to garnish 1. Combine all ingredients except garnish in a cocktail shaker and shake for 10 seconds. 2. Strain into a chilled martini glass and garnish with the cranberries and mint sprig.
